Protein Gingerbread Cookies

Ingredients:

  • 1/4 cup butter, room temperature
  • 1/4 cup Truvia
  • 1/4 cup brown sugar Truvia
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp molasses
  • 1 cup gluten-free all-purpose flour (1:1)
  • 1/2 cup almond flour
  • 1 scoop PEScience Multi-purpose Protein
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp cloves
  • 1/8 tsp salt

    Directions:

    • Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
    • Place the butter and Truvia sweeteners into a bowl of a stand-alone mixer. Using a paddle attachment, beat until the mixture is creamy. Add in the egg, vanilla, and molasses and mix until combined.
    • Add the flours, protein, spices, and salt, and mix until a dough forms.

    • Dust a clean surface with flour and roll out the dough until it’s 1/4 inch thick. Use gingerbread cookie cutters to cut out shapes and place them on the baking sheet.
    • Bake the cookies for 7-8 minutes. Let them cool on a baking sheet for 10 minutes, then transfer them to a cool rack until completely cooled. Decorate with icing if desired.
